Use very Cold unsalted butter
Brush lightly with an egg wash or milk before baking for golden scones
The Recipe:
Instructions:
- Preheat the oven to 400 F and place a rack in the middle. Prepare a baking sheet with parchment paper as well and set aside.
- In a medium bowl whisk the dry ingredients; the flour, baking powder, cinnamon, ginger, nutmeg, cloves, all spice, and salt.
- Next, use a cheese grater to grate the cold butter into the flour mixture from step 2.
- Use your fingers, a pastry blender, two forks, or a couple knives to create pea sized chunks of butter covered in the flour mixture.
- In another medium bowl prepare the wet ingredients. Whisk the pumpkin puree, vanilla, brown sugar, egg, and buttermilk until smooth. Pour over the dry mixture and use your hands or a rubber spatula to combine until a ball comes together.
- Next, lightly flour a working surface and place the ball of dough onto it. Make a circle with your dough about 6inch in diameter and use a knife to make 8 equal wedges.
- Place the wedges on your baking sheet and brush on an egg wash or extra buttermilk with the back of a spoon.
- Bake for 20-22 minutes.
- Let cool and enjoy!
